We crush carefully selected olive varietals just hours after they’ve been harvested from the family farms where we source them in order to make our extra virgin olive oils. Unlike most flavored olive oils on the market, our artisan crushed olive oils are never infused or flavored after the fact. We actually crush ingredients, such as ripe citrus and fresh herbs, together with California olives. Food to food. This process results in clean, fresh and all-natural authentic flavor. Our vinegars are made using premium wine varietals from the heart of California’s wine country and are handcrafted in small batches at our state-of-the-art vinegar fermentation facility in Sonoma County. We like to say, “From the best wines on earth, we create the best vinegars.” As with our olive oils, O strives to make the cleanest and best tasting vinegars possible. The process begins as soon as the wine arrives at our plant, where we introduce our very own vinegar cultures and then rely on time-honored techniques, allowing nature and time to work their magic to create complex and rich vinegars.
