Olive Oil Mashed Potatoes

Ahh, mashed potatoes. Our ultimate definition of comfort food. Dress them up for a holiday dinner of turkey, ham or prime rib. Or, keep it simple for a weeknight compliment to salmon on the grill or your mom’s meatloaf. Either way, you can feel confident by skipping the cream and butter and know that the flavor will still be there, thanks to our artisan crushed olive oils. Shhh…your family and friends will never know they are eating so healthy!

Ingredients

2 pounds potatoes, peeled and cut into 1-inch chunks
8 garlic cloves, peeled
Salt
¼ cup O California Roasted Garlic Olive Oil and/or O California Fresh Basil Olive Oil (more for drizzling, optional)

Instructions

Bring water to a boil in a large saucepan.

 

Add potatoes, garlic and 2 teaspoons salt and cook at a brisk simmer until potatoes are tender, about 15 minutes.


Drain potatoes and garlic, reserving 1 cup of cooking liquid. Mash potatoes and garlic.

 

Stir in olive oil and then thin to desired consistency with reserved cooking liquid. 

 

Add kosher salt and cracked pepper to taste. (Optional: drizzle with more olive oil)

Notes

Nothing is worse than starchy mashed potatoes that is more reminiscent of glue than our beloved comfort food. Be very careful not to whip or blend your potatoes. Instead, use a potato masher and leave some chunks for texture.
