Sherry Evo Vinaigrette

Lightly floral, smoky and O-so-smooth O Aged Sherry Vinegar is the star of this surprisingly simple vinaigrette. Toss leafy garden greens with your favorite fresh salad ingredients, add a splash of delicate deliciousness, and devour!

Ingredients

1 tbsp O Aged Sherry Vinegar
2 tbsp O California Extra Virgin Olive Oil or O Olio Nuovo Extra Virgin Olive Oil
¼ tsp sea salt
Pinch of fresh ground pepper to taste

Instructions

Combine all ingredients in a small bowl and whisk.


Adjust salt and pepper as desired.


Splash over freshly picked garden greens.

Notes

We are particularly fond of using this vinaigrette with a salad of fresh greens, cherry tomatoes and chopped shallots. We like to marinate the tomatoes and shallots in the vinaigrette first, and then toss over leafy lettuces. Simply delicious!

Notes

Fun fact: It’s the acidic ingredients in ceviche, such as fresh-squeezed citrus juice and vinegar, that “cook” raw fish without the use of heat. Because of this, it’s best to use the freshest fish available and to serve ceviche chilled or at room temperature. We like to display our ceviche in clear glass bowls or cocktail glasses to show off its bright and colorful ingredients.
